Just Peachy Breakfast Fondue – An easy Saturday Fare

Breakfast fondue is easy to throw together and can be really nutritious if you make sure that it is low in calories and fat, and offers whole grains and fruit.  Whole fruit is so much better for you than sugar-filled fiberless juices.  Fondues can really be a hit for breakfast anytime of year, too.  Warm foods are great for breakfast, even in the summer.

This  recipe is offers a fun twist on the usual fondues. It is healthy and scrumptious.
Plus it is so easy, because the ingredients are items you would normally stock in your kitchen.

Peachy Breakfast Fondue Recipe

1 quart or 15 oz. can sliced peaches with juice, untrained
1/3 cup maple syrup
2 T.  light cream cheese, pre-whipped or softened at room temperature
1/4 tsp. vanilla
dash of nutmeg

Combine the peaches, syrup, cream cheese, vanilla and cinnamon. Blend in a food processor on high until mixture is smooth. If there are some lumps it is okay, these will disappear with the following step.

Pour sauce into a medium saucepan. Warm over medium-high heat. Stir often, until  the sauce bubbles around the edge.

Serve fondue in a fondue pot over low heat.  Some dipping suggestions are whole grain mini waffles or pancakes, Fresh fruit or French toast slices.
